Vegan, Fudgy Low-Sugar Brownies

Do you have a craving for brownies with less guilt? Enjoy this recipe for yummy, fudgy vegan brownies!

Ingredients:

1/2 cup cocoa powder

1/3 cup aguafaba (water from a can of chickpeas)

1 flax egg (1 tablespoon of ground flax seed mixed with 2 tablespoons of warm water)

1/4 cup coconut oil

2 tablespoons tahini (sesame butter--feel free to replace this with your favorite nut butter!)

1/2 cup of coconut sugar

1/2 cup vegan chocolate chips or dark chocolate chopped roughly

1/2 cup flour

1/2 cup almond meal

 

Instructions:

1. Prepare the flax egg by mixing 1 tablespoon of ground flax seeds with 2 tablespoons of warm water in a small bowl. Set it aside until it reaches a thick consistency (about 3 minutes).

2. I large bowl, whisk together the wet ingredients (aguafaba, tahini, coconut oil, and  the flax egg).

3. Gently fold/mix in the dry ingredients into the wet ingredients (cocoa powder, coconut sugar, chocolate chips, flour and almond meal)

4. Pour the mixture into a baking pan and bake on 350 degrees Fahrenheit for 20 minutes.
