Spiced Stovetop Skillet Granola


2 cups of oats
3 tablespoon of coconut oil or olive oil, separated
¼ cup of coconut sugar 
1 teaspoon of cinnamon
1 teaspoon of ground ginger 
¼ teaspoon of salt
1 tablespoon of honey or agave
½ cup of sliced almonds
¼ cup of flaxseed or chia seed (optional)


Add 1 tablespoon of the coconut oil to a skillet over medium heat. Once it is melted, add the oats. Stir continuously until the oats begin to turn golden brown (about 5-7 minutes). Add the sliced almonds during the last minute.  Remove the oats and sliced almonds from the skillet into a separate bowl. Mix the salt, cinnamon, and ginger into the oats and set aside. In the same skillet, stir in the remaining coconut oil, coconut sugar, and honey. Stir continuously. Once the mixture is melted and begins to slightly bubble, add the oat mixture to the skillet and stir until all oats are coated (about 1 minute). Turn off the heat and spread the granola evenly onto a baking sheet and let cool. Enjoy with yogurt, milk or your favorite fruit!
