Japanese Sweet Potato Hash





2 medium or 1 large Japanese Sweet Potato, diced

1 medium red onion, diced

1 teaspoon of smoked paprika

1 teaspoon of garlic powder

1 teaspoon of salt

1 teaspoon of pepper

2 tablespoon of canola oil

1 tablespoon of olive oil

3 eggs 

Serves 2-3 


Toss the paprika, garlic powder, salt, and pepper in a large bowl with the diced sweet potatoes. In a large skillet, heat the canola oil and olive oil on medium-low heat. Once warm, sautee the diced onions until soft (about 1 minute). Next, add the sweet potatoes and spread them out evenly in the skillet. Let them fry on medium-high heat and stir periodically with a spatula until they are soft and golden brown. Next, turn the heat down to low and make three spaces in the sweet potatoes for the eggs. Finally, gently crack the eggs into the spaces and let them cook to your preferred runniness! Enjoy!
