Decadent Peach, Blueberry Pistachio Steel Cut Oats

Homemade steel cut + whole oats with blueberries, pistachios and peaches, yum! What was your healthy breakfast today? Recipe below- Enjoy!

Serves 2
3/4 cup of whole oats
1/4 cup steel cut oats
1 cup of water
3/4 cup of milk
1 teaspoon of cinnamon
1 teaspoon of honey
1/2 cup fresh blueberries
1 peach, diced
1/4 cup pistachios

Combine the oats, water, milk, cinnamon, honey and blueberries in a pot, stir and bring to a boil.
Lower the heat and let simmer for 10 minutes or until the oats are tender.
Stir the oats every two minutes to prevent sticking.
If your oats stick to the pan before they are tender, add more water and stir.
Once the oats are tender and creamy, spoon them into two bowls, top with freshly diced peaches and pistachios and enjoy! 😋
